Lavender Balsamic Glazed Salmon

Ingredients:

– 2 tablespoons Oliva di Vita Lavender Dark Balsamic Vinegar
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 teaspoon honey or maple syrup

– 3 cups mixed vegetables (e.g., carrots, bell peppers, zucchini, cherry tomatoes)
– 2 tablespoons olive oil
– Salt and pepper, to taste
– 1 teaspoon dried thyme

Instructions:

1. Preheat the Oven:
– Preheat your oven to 400°F (200°C).

2. Marinate the Salmon:
– Season the salmon fillets with salt and pepper.
