Roasted Chicken with Montmorency Cherry Rosé Balsamic Pan Drizzle

Bright, cozy, and weeknight-friendly. This is a “throw it in the oven and look impressive anyway” situation.

Ingredients (serves 2–4)

  • 4 bone-in, skin-on chicken thighs (or breasts if you prefer)
  • Salt and black pepper
  • 2 tablespoons Ultra Premium Extra Virgin Olive Oil
  • 3 tablespoons Montmorency Cherry Rosé Balsamic
  • 1 clove garlic, lightly smashed
  • Optional: fresh rosemary or thyme

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken
    Pat chicken dry and season generously with salt and pepper. Place in a baking dish and drizzle with olive oil. Add the garlic and herbs if using.
  3. Roast
    Roast uncovered for 35–45 minutes, until the skin is golden and the chicken is cooked through.
  4. Finish with balsamic
    Remove the pan from the oven and drizzle the Montmorency Cherry Rosé Balsamic directly over the hot chicken. Let it sit for 2–3 minutes so the balsamic warms and lightly thickens in the pan juices.
  5. Serve
    Spoon the pan juices over the chicken and serve.

  • Simple arugula salad with olive oil and a splash of the same balsamic
  • Crusty bread for “accidentally” soaking up the sauce
