Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tbsp Sesame Oil
- 3 tbsp Watermelon White Balsamic
- 1 tbsp Aceto Balsamico Dark Balsamic
- 1 tsp honey (optional, if you want it a little sweeter)
- 4 cups mixed greens
- ½ cucumber, sliced
- ¼ red onion, thinly sliced
- ¼ cup feta cheese
- Salt & pepper to taste
Instructions:
- Make the glaze:
In a small bowl, whisk together the sesame oil, watermelon balsamic, dark balsamic, and honey. - Cook the chicken:
Season chicken with salt and pepper. Heat a pan over medium heat and cook chicken for about 5–6 minutes per side. During the last couple of minutes, brush generously with the glaze and let it caramelize slightly. - Rest & slice:
Let the chicken rest for a few minutes, then slice. - Build the salad:
Toss greens, cucumber, onion, and feta in a bowl. Top with sliced chicken. - Finish strong:
Drizzle with any remaining glaze (or a little extra watermelon balsamic if you’re feeling bold).
