**Ingredients:**
For the Chicken Marinade:
– 4 boneless, skinless chicken breasts
– 1/4 cup #OlivadiVitaEVOO’s Tahitian Vanilla Dark Balsamic
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– Salt and pepper, to taste
For the Pumpkin Glaze:
– 1 cup canned pumpkin puree
– 1/4 cup #OlivadiVitaEVOO’s Tahitian Vanilla Dark Balsamic
– 2 tablespoons honey
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– Salt, to taste
**Instructions:**
1. In a bowl, whisk together the marinade ingredients: #OlivadiVitaEVOO’s Tahitian Vanilla Dark Balsamic, minced garlic, dried thyme, salt, and pepper.
2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or ideally, overnight.
3. Preheat your grill or stovetop grill pan over medium-high heat.
4. While the grill is heating, prepare the pumpkin glaze. In a saucepan, combine the canned pumpkin puree, #OlivadiVitaEVOO’s Tahitian Vanilla Dark Balsamic, honey, ground cinnamon, ground nutmeg, and a pinch of salt. Cook over medium heat, stirring frequently, until the mixture is heated through and well combined. Remove from heat and set aside.
5. Remove the chicken breasts from the marinade, allowing any excess marinade to drip off. Grill the chicken for about 6-8 minutes per side, or until cooked through and no longer pink in the center.
6. During the last few minutes of grilling, brush a generous amount of the pumpkin glaze onto each side of the chicken. Allow the glaze to caramelize slightly on the chicken.
7. Once the chicken is fully cooked and glazed, remove it from the grill and let it rest for a few minutes before serving.
8. Serve the Tahitian Vanilla Balsamic Pumpkin Glazed Chicken with additional pumpkin glaze on the side for dipping. You can also garnish with fresh thyme leaves or a sprinkle of ground cinnamon for an extra touch of flavor and presentation.
This recipe combines the unique flavors of Tahitian vanilla and dark balsamic with the earthy sweetness of pumpkin, creating a savory and sweet glaze that perfectly complements grilled chicken. Enjoy this delicious and autumn-inspired dish!
