Calabrian Pesto Pasta with Spicy Shrimp and Roasted Vegetables

Calbrian Pesto Shrimp & Veg recipe

Ingredients:

*For the Pasta:*
– 12 oz pasta (penne or fusilli)
– 3 tbsp Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil
– 2 cloves garlic, minced
– 1/2 cup sun-dried tomatoes, julienned
– 1/2 cup fresh cherry tomatoes, halved
– 1/4 cup black olives, sliced
– 1/4 cup roasted red peppers, sliced
– 1/2 cup fresh basil leaves, roughly chopped
– 1/4 cup grated Pecorino Romano cheese
– Salt and pepper to taste

*For the Shrimp:*
– 1 lb large shrimp, peeled and deveined
– 2 tbsp Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil
– 1/2 tsp red pepper flakes (optional, for extra heat)
– 1/2 tsp smoked paprika
– Salt and pepper to taste

*For the Roasted Vegetables:*
– 1 zucchini, sliced
– 1 red bell pepper, cut into strips
– 1 yellow bell pepper, cut into strips
– 1 red onion, sliced
– 2 tbsp Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil
– Salt and pepper to taste

Instructions:

1. Prepare the Roasted Vegetables:
– Preheat the oven to 400°F (200°C).
– Place the sliced zucchini, bell peppers, and red onion on a baking sheet. Drizzle with 2 tbsp of Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil, and season with salt and pepper. Toss to coat.
– Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.

2. Cook the Pasta:
– While the vegetables are roasting, cook the pasta according to package instructions in salted water until al dente. Drain and set aside.

3. Prepare the Shrimp:
– In a large skillet, heat 2 tbsp of Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil over medium-high heat.
– Add the shrimp, red pepper flakes, smoked paprika, salt, and pepper. Sauté the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from the skillet and set aside.

4. Make the Pasta Sauce:

– Add the sun-dried tomatoes, cherry tomatoes, black olives, and roasted red peppers. Cook for 3-4 minutes, stirring occasionally.
– Add the cooked pasta to the skillet and toss to combine with the sauce and vegetables. Add the roasted vegetables and gently mix them in.

5. Assemble the Dish:
– Add the shrimp back to the skillet and gently toss everything together.
– Remove from heat and stir in the fresh basil leaves.
– Sprinkle with grated Pecorino Romano cheese and adjust seasoning with salt and pepper if needed.

6. Serve:
– Serve the pasta hot, garnished with additional fresh basil and a drizzle of Oliva di Vita’s Spicy Calabrian Pesto Infused Olive Oil for an extra burst of flavor.
