Creamy Coconut Rice

Ingredients
– 1 cup jasmine rice, rinsed
– 1 cup coconut milk (unsweetened)
– 1 cup water
– 2 tbsp Oliva di Vita Coconut White Balsamic
– 1/4 tsp salt
– 1 tbsp unsweetened shredded coconut (optional, for garnish)
– Fresh cilantro, chopped, for garnish

Instructions
1. **Cook the Rice:** In a medium saucepan, combine the rinsed jasmine rice, coconut milk, water, and salt. Stir well and bring to a gentle boil over medium heat.

2. **Simmer:** Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice has absorbed the liquid and is tender.

3. **Fluff and Add Balsamic:** Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork, then drizzle the Coconut White Balsamic over the rice, gently folding it in to distribute the flavor.

4. **Garnish and Serve:** Top with a sprinkle of shredded coconut and fresh cilantro, if desired. Serve warm as a side dish with seafood or grilled vegetables.
