Pan seared halibut with citrus glaze

Ingredients
– 4 halibut fillets (6 oz each)
– 2 tbsp Oliva di Vita Jalapeño Fused Olive Oil
– Salt and pepper to taste
– 1 orange, zested and juiced
– 1 lime, zested and juiced
– 1 tbsp honey
– 2 cloves garlic, minced
– 1/2 tsp smoked paprika
– Fresh cilantro, chopped, for garnish
– Lime wedges for serving

Instructions
1. Prepare the Glaze: In a small bowl, combine orange zest, orange juice, lime zest, lime juice, honey, and smoked paprika. Whisk well and set aside.

2. Season the Halibut: Pat the halibut fillets dry with paper towels, then season both sides with salt and pepper.

3. Sear the Halibut: Heat 1 tbsp of the Jalapeño Fused Olive Oil in a large skillet over medium-high heat. Place the halibut fillets in the pan, cooking for 3-4 minutes per side or until the fish is opaque and flakes easily with a fork. Transfer the fish to a plate and cover to keep warm.

4. Make the Glaze: Reduce the heat to medium and add the remaining Jalapeño Fused Olive Oil to the skillet along with minced garlic. Sauté for 1 minute until fragrant. Pour in the citrus mixture, stirring and simmering until it slightly thickens, about 2-3 minutes.

5. Serve: Drizzle the warm citrus glaze over each halibut fillet. Garnish with fresh cilantro and serve with lime wedges on the side.

Tips
Pair this dish with a side of coconut rice or a light avocado and mango salad to balance the spice and add a tropical flair. Enjoy!
